  • 350 g Lotus biscoff cookies
  • 150 g unsalted butter (melted)
  • 3 tart apples (peeled and sliced)
  • 690 g cream cheese (softened)
  • 75 g granulated sugar
  • 100 g Greek yogurt
  • 3 large eggs
  • Ground cinnamon
  • Ground nutmeg
  • 55 g unsalted butter (melted)
  • 50 g all-purpose flour
  • 50 g brown sugar
  • 20 g rolled oats

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Crush the biscoff cookies and mix with melted butter. Press into the bottom of a springform pan.
  3. Combine melted butter, flour, brown sugar, and oats for the streusel topping; set aside.
  4. Toss sliced apples with brown sugar, cinnamon, and cornstarch; layer over the crust.
  5. Beat cream cheese and sugar until smooth; mix in yogurt, vanilla, spices, and eggs until well combined.
  6. Pour cheesecake filling over apple layer and top with streusel mixture.
  7. Bake for about 45-50 minutes or until set but slightly jiggly in the center.
  8. Cool completely before serving.
