  • 2 pounds beef chuck, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 1 cup parsnips, diced
  • 1 cup celery, diced
  • 1 tablespoon tomato paste
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear beef cubes in batches until browned on all sides.
  2. Add diced onion and minced garlic to the pot; sauté until the onion becomes translucent.
  3. Stir in tomato paste and cook for an additional minute before adding a splash of beef broth to scrape up browned bits.
  4. Return the beef to the pot along with remaining broth and add vegetables: carrots, potatoes, parsnips, and celery.
  5. Season with thyme, rosemary, bay leaf, salt and pepper; bring to a boil then reduce heat to simmer gently.
  6. Cover and let simmer for about 2 hours until beef is tender.
  7. Adjust seasoning before serving hot with fresh parsley garnish.
