  • 2 large baking potatoes
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 200g block of feta
  • 1 head of garlic
  • 1 lemon
  • Honey (for drizzling)
  • Fresh basil

Instructions

  1. Preheat your oven to 200C | 390F.
  2. Wash and cube the baking potatoes into bite-sized pieces. Par-boil in water for 6-8 minutes, then drain and let steam dry.
  3. In a baking dish, toss the par-boiled potatoes with olive oil, thyme, oregano, salt, and pepper.
  4. Wrap the garlic head in foil with olive oil and add it to the dish. Roast for about 30-40 minutes until golden brown.
  5. Add feta to the center of the potatoes along with lemon juice and roast for another 15 minutes.
  6. Squeeze roasted garlic into a bowl, mash it, then mix back with the potatoes along with fresh basil.
  7. Drizzle honey over the dish before serving.
