  • 2 medium sweet potatoes
  • 2 tablespoons olive oil
  • 1 avocado
  • ½ cup canned corn
  • ½ cup black beans
  • ¼ cup diced red onion
  • 2 tablespoons chopped fresh cilantro
  • ¼ cup shredded cheese
  • 2 tablespoons sliced green onions

Instructions

  1. Preheat oven to 400°F (200°C). Toss diced sweet potatoes with 1 tablespoon olive oil, salt, pepper, paprika, and garlic powder. Spread on a baking sheet.
