  • 4 pounds beef chuck roast
  • 10 guajillo chiles
  • 5 ancho chilies
  • 3 arbol chilies
  • 2 Roma tomatoes
  • 1 white onion
  • 6 garlic cloves
  • 2 cups low-sodium beef broth
  • 2 tablespoons apple cider vinegar
  • Corn tortillas (or cassava flour tortillas)
  • Oaxacan cheese

Instructions

  1. Prepare the sauce by rehydrating the chiles in hot water for 15 minutes. Blend softened chiles with tomatoes, onion, garlic, and some beef broth until smooth.
  2. In a large pot or Dutch oven, combine beef chunks with the blended sauce, remaining broth, and spices. Simmer on low heat for about 8 hours until the beef is tender.
  3. Shred the cooked beef using two forks. Warm tortillas in a skillet and fill them with shredded beef, diced onions, chopped cilantro, and Oaxacan cheese.
  4. Fry the assembled tacos seam-side down in oil over medium heat until golden brown on both sides.
  5. Serve hot with consommé for dipping.
