  • 6 oz fresh blackberries
  • 3 tbsp balsamic vinegar
  • 1/4 cup olive oil
  • 2 tsp honey
  • 1 tsp dijon mustard
  • 1 fresh or dried thyme
  • 1/2 tsp salt
  • 2 cups basil, torn
  • 4 cups arugula
  • 1 ripe avocado, pitted and sliced
  • Toasted pumpkin seeds for serving (optional)

Instructions

  1. Prepare the blackberry vinaigrette by blending blackberries, balsamic vinegar, olive oil, honey, salt, and thyme until smooth. Strain to remove seeds.
  2. Marinate the chicken in two-thirds of the vinaigrette for at least 30 minutes in the fridge.
  3. Grill marinated chicken over medium heat until cooked through (internal temperature reaches 165°F), about 20-25 minutes.
  4. Assemble the salad by placing arugula and torn basil as a base, then top with sliced grilled chicken, avocado, and remaining blackberries. Drizzle with reserved vinaigrette before serving.
