  • 3 cups chopped broccoli
  • 1 medium honeycrisp apple
  • 1 small lemon (juice only)
  • â…“ cup crumbled feta cheese (or extra sharp white cheddar)
  • 2 ½ tablespoons extra virgin olive oil
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon dijon mustard
  • ½ tablespoon honey
  • Sea salt and black pepper to taste

Instructions

  1. Rinse quinoa under cold water, then combine with water in a pot. Bring to a boil, reduce heat, cover, and simmer for about 13 minutes until water is absorbed. Fluff with a fork.
  2. Toast nuts in a dry skillet over medium heat until golden brown and fragrant.
  3. Chop broccoli into bite-sized pieces and dice the honeycrisp apple.
  4. In a small bowl, whisk together lemon juice, olive oil, apple cider vinegar, dijon mustard, honey, sea salt, and black pepper.
  5. In a large bowl, combine cooked quinoa, toasted nuts, chopped broccoli, diced apple, and crumbled cheese. Drizzle with dressing and toss gently.
