  • 1 cup shredded cheese mix (mozzarella and Parmesan)
  • 1/2 cup oil-packed sun-dried tomatoes (divided)
  • 1/2 cup fresh basil (chopped)
  • 1/2 cup olives (chopped)
  • 2 cloves garlic (minced)
  • 2 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 cup panko breadcrumbs
  • 1 tbsp butter
  • 1 fresh tomato (diced for garnish)
  • Fresh basil leaves (for garnish)

Instructions

  1. Finely chop half of the sun-dried tomatoes and set aside the other half for garnish.
  2. In a large mixing bowl, combine softened cream cheese, shredded cheese mix, chopped sun-dried tomatoes, basil, olives, minced garlic, oregano, salt, and pepper. Mix until well combined.
  3. Shape the mixture into a ball and wrap it tightly in plastic wrap. Chill in the refrigerator for at least 30 minutes.
  4. In a skillet over medium heat, melt butter and toast panko breadcrumbs until golden brown.
  5. Roll the chilled cheese ball in toasted breadcrumbs until evenly coated.
  6. Garnish with diced tomatoes and fresh basil leaves before serving.
