  • 2 boneless, skinless chicken breasts
  • 1/2 cup buffalo wing sauce
  • 2 oz cream cheese, softened
  • 1/2 cup shredded Monterey Jack or cheddar cheese
  • 1/4 cup additional shredded cheese (if not using blue cheese)
  • 8 slices sourdough bread
  • 2 tbsp butter, softened
  • 1 stalk celery, thinly sliced

Instructions

  1. Cook chicken breasts in a skillet or grill until fully cooked (6-7 minutes per side). Shred and toss with buffalo sauce.
  2. In a bowl, combine cream cheese with shredded cheese until well mixed.
  3. Spread the cheese mixture on one side of each slice of bread. Layer buffalo chicken and celery on half the slices, then top with remaining bread.
  4. Preheat your panini press or grill pan over medium heat. Butter the outside of each sandwich and grill for about 3-4 minutes until golden brown and gooey inside.
  5. Serve immediately, optionally with a side salad or sweet potato fries.
