  • 1 yellow squash (½ lb.)
  • 1 red bell pepper
  • 1 red onion
  • 14 oz. chicken sausage or turkey sausage
  • 2 Tbsp cooking oil, divided
  • 1/2 tsp smoked paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • 1/4 tsp salt
  • 1/4 tsp freshly cracked black pepper
  • 2 Tbsp chopped fresh parsley

Instructions

  1. Slice zucchini, yellow squash, red bell pepper, and onion into bite-sized pieces.
  2. Heat 1 tablespoon of cooking oil in a skillet over medium heat; add sliced sausage and cook until browned. Transfer to a bowl.
