  • 1 tablespoon vegetable oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 cup coconut milk
  • 1 cup vegetable broth
  • 1 large tomato, chopped
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped cilantro
  • 1 tablespoon lime juice
  • 2 tablespoons chopped scallions

Instructions

  1. Heat vegetable oil in a large skillet over medium heat.
  2. Sauté chopped onion until softened (about 5 minutes).
  3. Add minced garlic and grated ginger; cook for another 2 minutes.
  4. Stir in spices (turmeric, cumin, coriander, paprika, cinnamon, cayenne) and toast for 1 minute.
  5. Peel and slice plantains into half-inch rounds; add them to the skillet.
  6. Pour in coconut milk and vegetable broth; stir gently.
  7. Add chopped tomato along with brown sugar, salt, and black pepper.
  8. Bring to a simmer; cook for 15-20 minutes until plantains are tender.
