  • 45 pound bone-in, skin-on turkey breast
  • 1/2 cup unsalted butter
  • Zest of 1 lemon
  • Zest of 1 orange
  • Fresh rosemary, finely chopped
  • Fresh thyme, finely chopped
  • Fresh sage, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 onion, quartered
  • 1 lemon, sliced
  • 1 orange, sliced
  • 1/2 cup chicken broth

Instructions

  1. Combine softened butter with lemon zest, orange zest, herbs, garlic, salt, and pepper to make an herb butter.
  2. Loosen the skin of the turkey breast and rub half the mixture beneath it. Spread the remaining butter over the exterior.
  3. Preheat oven to 350°F (175°C). Place onion and citrus slices in a roasting pan; pour in chicken broth.
  4. Roast turkey on top of the vegetables for about 1 hour and 40 minutes until internal temperature reaches 165°F (74°C).
  5. Let rest for 15-20 minutes before slicing.
