  • 1 cup full-fat coconut milk
  • 1/2 cup tomato puree
  • 2 tablespoons butter
  • 2 teaspoons garam masala
  • 1 teaspoon turmeric
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon chili powder
  • Salt and pepper, to taste
  • Fresh cilantro leaves, for garnish
  • Cooked basmati rice or naan, for serving

Instructions

  1. Heat vegetable oil in a large pan over medium heat. Sauté chopped onions until translucent (about 5 minutes).
  2. Add minced garlic and grated ginger; cook for another 1-2 minutes.
  3. Add chicken pieces; cook until browned on all sides (8-10 minutes).

  5. Lower heat and mix in butternut squash puree, coconut milk, and tomato puree until well combined.
  6. Simmer for about 20 minutes until sauce thickens.
