Ingredients

Scale
  • 5 pounds Yukon gold potatoes
  • 2 tablespoons unsalted butter
  • 2 cloves garlic (minced)
  • 1 tablespoon all-purpose flour
  • 1 cup heavy cream (or substitute with whole milk)
  • 1/2 cup Parmesan cheese (optional)
  • 1 teaspoon fresh thyme
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
  2. Slice the Yukon gold potatoes thinly (about 1/16 inch) using a mandolin or sharp knife.
  3. In a pot over medium heat, melt the butter with minced garlic until fragrant. Stir in the flour to create a roux; cook for 1-2 minutes.
  4. Gradually add heavy cream while stirring continuously until thickened (about 5 minutes). Mix in optional Parmesan cheese, thyme, salt, and pepper until smooth.
  5. Combine sliced potatoes with the sauce in a large bowl, ensuring all slices are coated.
  6. Layer the potatoes upright in the greased dish, pouring any leftover sauce on top. Cover with aluminum foil and bake for 30 minutes.
  7. Remove foil and bake uncovered for another 30 minutes until golden brown and crispy.
  8. Allow cooling for about 10 minutes before serving.
