  • 6 medium carrots (peeled)
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon kosher salt
  • 2 teaspoons garlic (minced)
  • ½ teaspoon onion powder
  • ½ teaspoon red pepper flakes
  • 1 teaspoon fresh rosemary (chopped)
  • 2 cups grated parmesan cheese (divided)
  • Chopped parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cut the carrots into 2-inch sections, slicing each section in half lengthwise.
  3. In a large bowl, mix olive oil, salt, garlic, onion powder, red pepper flakes, and rosemary. Toss in the carrot pieces until well coated.
  4. Sprinkle 1½ cups of grated parmesan cheese onto a lined sheet pan.
  5. Arrange carrot pieces cut-side down on top of the cheese.
  6. Top with remaining parmesan cheese.
  7. Bake for 30-35 minutes until tender and crispy.
  8. Garnish with parsley before serving warm.
