4 small to medium chicken breasts (or 2 large halved)
Salt and pepper to taste
2 tablespoons olive oil
3–4 cloves garlic, minced
1 cup light cream or heavy cream
1 tablespoon Italian seasoning or oregano
1/2 cup grated parmesan cheese
1 cup chopped spinach (optional)
Instructions
Season chicken breasts with salt and pepper on both sides.
Heat olive oil in a skillet over medium-high heat. Cook chicken for about 5-6 minutes per side until golden brown and crispy. Remove from skillet.
Lower heat and add minced garlic to the skillet; sauté for about 30 seconds until fragrant.
Pour in cream and stir continuously to create a smooth sauce.
Add Italian seasoning and grated parmesan cheese; stir until blended. If using spinach, add it now and let simmer for 2-3 minutes.
Return chicken to the skillet, spoon sauce over each piece, and simmer for another minute before serving.
