  • 10 oz white chocolate melting wafers

Instructions

  1. Line a baking sheet with parchment paper.
  2. Crush the Lotus Biscoff cookies in a food processor until finely crumbled.
  3. Reserve 1 tablespoon of crumbs; mix the remaining crumbs with softened cream cheese until combined.
  4. Roll the mixture into small balls and place on the prepared baking sheet. Chill for 30 minutes.
  5. Melt white chocolate wafers in intervals until smooth.
  6. Dip each truffle ball into melted chocolate, letting excess drip off, and return to the baking sheet.
  7. Before the chocolate sets, sprinkle reserved cookie crumbs on top.
  8. Allow to sit until chocolate hardens, then store in the fridge until ready to serve.
