  • 2 teaspoons olive oil or olive oil spray
  • Salt and pepper – to taste
  • 1 lb lean ground turkey
  • 1 medium onion, chopped
  • 1/2 tablespoon minced garlic
  • 2 tablespoons taco seasoning
  • 1 cup corn
  • 1 cup canned black beans, drained and rinsed
  • 2 cups tomato salsa
  • 1 cup cooked brown rice
  • 1 cup shredded cheese (Mexican blend or sharp cheddar)
  • 2 tablespoons chopped cilantro
  • Sour cream or plain Greek yogurt
  • Limes
  • Sliced avocado
  • Salsa

Instructions

  1. Preheat your oven to 350°F (175°C). Slice each bell pepper in half lengthwise and remove seeds. Place cut side up in a baking dish, spray lightly with olive oil, and season with salt and pepper. Bake for about 15 minutes to soften.
  2. In a pan over medium-high heat, cook the ground turkey in olive oil until browned. Stir in taco seasoning, onions, and garlic; cook until fragrant. Add corn, black beans, salsa, and rice; simmer for 2 minutes.
  3. Evenly fill each pepper half with the turkey mixture and top with shredded cheese. Bake for an additional 15 minutes until cheese is melted.
  4. Serve warm with toppings like avocado, cilantro, lime juice, or Greek yogurt.
