  • 1 1/2 tsp baking powder
  • 3/4 tsp nutmeg
  • 1/4 tsp salt
  • 6 tbsp (84g) unsalted butter, room temperature
  • 3/4 cups (155g) sugar
  • 1 1/2 tbsp vegetable oil
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1/2 cup + 2 tbsp (150ml) eggnog
  • 1/2 cup (115g) unsalted butter (for frosting)
  • 1/2 cup (95g) shortening (for frosting)
  • 4 cups (480g) powdered sugar (for frosting)
  • 4 tbsp (60ml) eggnog (for frosting)
  • 1/4 tsp vanilla extract (alcohol-free, optional) (for frosting)
  • 1 tsp nutmeg (for frosting)
  • pinch of salt (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, nutmeg, and salt.
  3. In another bowl, cream unsalted butter and sugar until light and fluffy.
  4. Add vegetable oil, vanilla extract, and eggs one at a time, mixing well.
  5. Gradually combine dry ingredients with the wet mixture while alternating with eggnog until just combined.
  6. Fill cupcake liners two-thirds full and bake for 18 minutes or until a toothpick comes out clean.
  7. Cool completely before frosting.
