  • Salt and pepper, to taste
  • 1 large diced onion
  • 2 diced celery stalks
  • 2 diced carrots
  • 3 cloves crushed garlic
  • 2 tablespoons tomato concentrate
  • 2 cups apple vinegar
  • 3 cups beef stock
  • 2 bay leaves
  • Fresh thyme and oregano sprigs

Instructions

  1. Heat olive oil over medium-high heat in a Dutch oven. Season short ribs with salt and pepper; sear until golden brown on all sides. Remove and set aside.
  2. In the same pot, sauté onion, celery, carrots, and garlic until onions are translucent.
  3. Stir in tomato concentrate; cook for one minute. Add apple vinegar and beef stock, scraping up any browned bits.
  4. Return short ribs to pot along with bay leaves, thyme, and oregano; stir gently.
  5. Cover and reduce heat to low; simmer for about two and a half hours until ribs are fork-tender.
