  • sticks (12 tablespoons) cold unsalted butter
  • ¼ cup cold water
  • lbs baking apples (3 large)
  • ⅓ cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 2 tablespoons melted unsalted butter
  • ⅛ teaspoon salt

Instructions

  1. Make the crust by mixing flour, salt, and sugar in a food processor. Add cold butter and pulse until crumbly. Stir in cold water until moistened. Knead gently into a ball and refrigerate.
  2. Prepare the filling by peeling, coring, and slicing apples. Toss with sugar, vanilla extract, cinnamon, melted butter, and salt.
  3. Roll out dough on parchment paper into a 14-inch circle. Layer apple slices in concentric circles on the dough.
  4. Fold edges of the dough over the filling to create pleats. Brush with beaten egg and sprinkle with turbinado sugar.
  5. Bake at 350°F for 55 to 65 minutes until golden brown.
