  • 1 tablespoon granulated sugar
  • 1 (14 oz) can sweetened condensed milk
  • 1 cup whole milk
  • 1 cup heavy cream
  • 2 egg yolks
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the tartlet shells by cutting and pressing Pâte Sucrée dough into tartlet pans. Freeze for at least 30 minutes.
  2. Preheat oven to 375°F. Prick the frozen shells with a fork, line with parchment paper, and fill with pie weights. Bake until golden brown (about 15-20 minutes). Let cool.
  3. For the strawberry jam, cook chopped strawberries and sugar in a saucepan over medium heat until thickened; cool.
  4. Make the pastry cream by simmering condensed milk, whole milk, and heavy cream. Whisk egg yolks and cornstarch separately, then mix into hot milk until thickened; chill.
  5. Assemble tartlets by layering the cooled strawberry jam in each shell followed by piping the chilled pastry cream on top. Garnish with halved strawberries.
