  • 1.2 kg (2.6 lb) sweet potatoes
  • 6 tbsp unsalted butter, melted
  • 3 large cloves garlic, finely grated
  • 1 tbsp fresh rosemary, finely diced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 45 g (1.5 oz) Parmesan cheese

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Peel sweet potatoes and slice them into uniform 3mm (1/8 inch) rounds.
  3. Brush a muffin tray with melted butter. In a bowl, combine the remaining butter, garlic, rosemary, salt, and pepper.
  4. Toss sweet potato slices in the mixture until well-coated.
  5. Stack the slices in muffin cups, sprinkling Parmesan cheese between layers.
  6. Cover with foil and bake for 35 minutes. Remove foil and bake at 200°C (400°F) for an additional 15 minutes until golden.
