  • 1 large bulb of garlic
  • 1.3kg baking potatoes
  • 5 tbsp butter
  • 2 tbsp heavy cream
  • 60g freshly grated Parmesan cheese
  • 4 large egg yolks
  • Olive oil, salt & pepper

Instructions

  1. Roast the garlic: Slice the top off the bulb, drizzle with olive oil, wrap in foil, and roast at 180C/356F for about 50-60 minutes until soft.
  2. Prepare the potatoes: Peel and dice the potatoes, boil in salted water until fork-tender (about 15-20 minutes), then drain well.
  3. Mash: Combine drained potatoes with roasted garlic, butter, cream, Parmesan, salt, and pepper. Fold in egg yolks.
  4. Pipe: Use a piping bag to shape the potato mixture into swirls on a lined baking tray.
  5. Bake: Drizzle with melted butter and bake at 200C/400F for about 15-20 minutes until golden brown.
