  • 1 large egg
  • ½ cup breadcrumbs
  • â…“ cup crumbled feta cheese
  • 2 tablespoons olive oil (for cooking)
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • Juice and zest of 2 lemons
  • Fresh parsley and dill for garnish

Instructions

  1. In a large bowl, mix ground chicken, egg, breadcrumbs, feta cheese, parsley, oregano, garlic, lemon zest, salt, and black pepper until well combined.
  2. Shape the mixture into small meatballs (1-2 inches). Heat olive oil in a skillet over medium heat and cook the meatballs until golden brown and fully cooked.
  3. Simultaneously, bring chicken broth to a boil in another pot. Stir in orzo and cook until al dente according to package instructions.
  4. Drain the orzo (reserve some broth if needed) and return it to the pot. Add butter or olive oil, lemon juice, minced garlic, lemon zest, salt, and pepper; toss gently.
  5. Serve the meatballs on plates alongside the lemon orzo. Garnish with fresh herbs and crumbled feta cheese.
