  • 1 1/2 pounds boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 2 tablespoons chopped cilantro
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. In a large freezer bag, combine chicken breasts with marinade ingredients: olive oil, lime juice, cilantro, chili powder, cumin, oregano, paprika, garlic powder, salt, and pepper. Seal and massage to coat chicken.
  2. Refrigerate for 1-3 hours to marinate.
  3. Preheat grill or oven to 400°F. If grilling, clean and oil grates; if baking, line a baking sheet with foil.
  4. Grill chicken for 4-6 minutes on each side until internal temperature reaches 165°F or bake for about 20-30 minutes.
  5. Let rest for 5-10 minutes before slicing and serving.
