  • 56 cloves garlic
  • 1/4 cup all-purpose flour
  • 4 cups low-sodium chicken or vegetable broth
  • 2 cups whole milk
  • 1/2 cup heavy cream (optional)
  • 2 cups sharp cheddar cheese
  • Fresh herbs (parsley, chives, thyme)

Instructions

  1. Peel and cube the Yukon Gold potatoes into uniform pieces.
  2. In a large pot, melt butter or the oil-butter mix over medium heat and sauté the chopped onion until translucent.
  3. Add minced garlic and cook until fragrant, stirring constantly.
  4. Sprinkle flour over the mixture, stirring to form a roux for about two minutes.
  5. Gradually whisk in the broth while scraping the bottom of the pot to avoid lumps.
