  • 4 boneless, skinless chicken breasts
  • Olive oil for drizzling
  • Salt and pepper to taste
  • 1 teaspoon garlic powder

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix ricotta cheese, chopped spinach, Parmesan (or nutritional yeast), basil, parsley, salt, and pepper until well combined.
  3. Place each chicken breast between plastic wrap and pound to about 1/2 inch thick.
