  • 1 1/2 cups walnuts, raw and unsalted
  • 1/2 cup pumpkin seeds, unshelled
  • 6 cups salad greens
  • 2 cups frisée leaves
  • 12 apples or pears, diced
  • 2 avocados, sliced
  • 2 cups pomegranate seeds
  • 1 cup crumbled cheese (blue, feta, or goat cheese, optional)
  • 1/3 cup honey or maple syrup
  • 1/3 cup virgin olive oil
  • 1/4 cup balsamic or apple cider vinegar
  • 2 teaspoons dijon mustard
  • 2 tablespoons honey
  • 1 tablespoon fig jam
  • 2 teaspoons orange peel zest
  • 2 tablespoons fresh orange juice
  • Salt and black pepper to taste
  • Chili flakes

Instructions

  1. Preheat oven to 350°F (175°C). Spread walnuts and pumpkin seeds on a baking sheet and toast for about 10 minutes until golden brown.
  2. In a bowl, whisk together honey (or maple syrup), olive oil, vinegar, dijon mustard, fig jam, orange zest, and juice. Season with salt and pepper.
  3. In a large bowl, combine salad greens, frisée leaves, diced apples or pears, sliced avocados, pomegranate seeds, toasted nuts, and cheese if using.
  4. Drizzle the dressing over the salad just before serving and gently toss to combine.
