  • 1 lb ground beef (or ground turkey)
  • 1 packet taco seasoning
  • 1/4 cup water
  • 1 cup cooked black beans
  • 1 cup corn kernels
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced green onions
  • 1/2 cup sliced jalapeños (optional)
  • Lime wedges for serving

Instructions

  1. Preheat oven to 425°F (220°C). Toss diced potatoes with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Spread seasoned potatoes on a baking sheet and roast for 25-30 minutes until crispy.
  3. In a skillet over medium-high heat, cook ground beef or turkey until browned. Drain fat and stir in taco seasoning and water; simmer for 2-3 minutes.
  4. Heat black beans and corn in a separate pot until warmed through.
  5. Assemble bowls starting with roasted potatoes as the base. Layer with taco meat, black beans, corn, and cheese.
  6. Top with sour cream, cilantro, tomatoes, green onions, and jalapeños if desired. Serve with lime wedges.
