  • 8 cups organic celery, sliced thin
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup fresh basil, chopped
  • 24 tablespoons celery leaves, chopped
  • 1/3 cup red onion, sliced thin
  • Kalamata olives for garnish
  • Feta cheese for garnish
  • 1/2 cup extra-virgin olive oil
  • 1/4 cup lemon juice
  • 1/2 teaspoon grated lemon zest
  • 1 tablespoon Dijon mustard
  • 11/2 teaspoons dried oregano
  • 3 tablespoons kalamata olives, pitted and chopped
  • 1 clove garlic, grated on small hole grater

Instructions

  1. Rinse and dry all vegetables. Slice celery diagonally and chop the herbs.
  2. In a large bowl, combine the celery, tomatoes, parsley, basil, red onion, kalamata olives, and feta cheese.
  3. Drizzle with the dressing made from olive oil, lemon juice, lemon zest, Dijon mustard, oregano, olives, and garlic; toss gently to coat.
  4. Season with freshly ground black pepper to taste.
  5. Chill for at least 30 minutes before serving for enhanced flavor.
