  • 12 oz. cream cheese (softened)
  • 6 Tablespoons sugar
  • 1 Tablespoon flour
  • 1 ½ teaspoon vanilla
  • 1 egg (slightly beaten)

Instructions

  1. Prepare the strawberry topping by cooking diced fresh strawberries with lemon juice, brown sugar, cornstarch, and vanilla extract until thickened.
  2. Make the graham cracker crust by mixing crumbs with sugar and melted butter; press into cupcake liners.
  3. For the streusel topping, mix flour, brown sugar, and melted butter until crumbly.
  4. Beat softened cream cheese with sugar, flour, vanilla extract, and an egg until smooth.
  5. Assemble by layering cheesecake filling over each crust and topping with strawberry mixture and streusel.
