  • 2 large eggs
  • 1 cup fresh orange juice
  • Zest of 2 oranges
  • 1 tbsp grated fresh ginger
  • Optional: 2 tbsp honey
  • Optional: 2 tbsp orange juice

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your baking pan.

  3. In another bowl, mix melted butter, honey, and eggs; then stir in orange juice, zest, and grated ginger.
  4. Fold dry ingredients into the wet mixture until just combined.
  5. Pour batter into the prepared pan and bake for 40–45 minutes or until a toothpick comes out clean.
  6. Optional: Brush the warm cake with a honey-orange glaze made from honey and orange juice.
  7. Let cool in the pan for about 10 minutes before transferring to a wire rack.
