  • 4 slices of crusty bread (sourdough or your choice)
  • 4 tablespoons basil pesto
  • 1 1/2 cups shredded mozzarella cheese (or 4 slices of fresh mozzarella)
  • 2 tablespoons unsalted butter (softened)
  • Optional: 1/4 cup grated Parmesan cheese

Instructions

  1. Spread 1 tablespoon of basil pesto on one side of each slice of bread.
  2. On two slices (pesto side up), layer shredded mozzarella or fresh mozzarella slices. Optionally add grated Parmesan cheese for extra flavor. Top with the remaining slices of bread (pesto side down).
  3. Butter the outside of each sandwich evenly.
  4. Heat a non-stick skillet over medium heat and grill the sandwiches for about 2-3 minutes per side until golden brown and crispy.
  5. Slice in half and serve warm.
