  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon fine sea salt
  • 113 grams unsalted butter (at cool room temperature)
  • 50 grams packed light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon fine sea salt
  • 188 grams powdered sugar (sifted)
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon milk (plus more if needed)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together unsalted butter and light brown sugar until fluffy. Add the egg and vanilla extract, then mix in pumpkin puree.
  3. In another bowl, whisk together flour, ground cinnamon, baking soda, and salt. Fold this mixture into the wet ingredients until just combined.
  4. Pour the batter into a greased baking pan and bake for about 25 minutes or until a toothpick comes out clean.
  5. For the frosting, beat together more unsalted butter with brown sugar and cinnamon. Gradually add sifted powdered sugar and milk until smooth.
  6. Once cooled completely, frost the pumpkin bars generously and cut into squares.
