  • 1 large egg yolk (room temperature)
  • 1 teaspoon vanilla extract
  • ⅓ cup coarse sugar for rolling
  • 1 large egg (room temperature)
  • ¼ cup brown sugar
  • Pinch table salt
  • ½ teaspoon pumpkin spice
  • ¼ cup whole milk
  • ½ cup pumpkin puree
  • ¼ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F and line a cookie sheet with parchment paper.
  2. In one bowl, combine flour, pumpkin spice, and salt. In another bowl, beat cream cheese and butter until smooth; add sugars, egg yolk, and vanilla until fluffy.
  3. Gradually mix dry ingredients into the wet mixture until just combined.
  4. In a separate bowl, whisk together egg, brown sugar, salt, pumpkin spice, milk, pumpkin puree, and vanilla for the filling.
  5. Take two tablespoons of dough, flatten it slightly, place one tablespoon of filling in the center, fold over the dough to encase it completely.
  6. Roll each cookie ball in coarse sugar and place on the baking sheet.
  7. Bake for 15 minutes or until lightly browned. Cool slightly before transferring to a wire rack.
