  • ½ cup creamy almond butter (or sunflower seed butter)
  • â…“ cup canned pumpkin puree
  • 3 tablespoons pure maple syrup
  • ¼ cup unsweetened shredded coconut
  • â…“ cup mini chocolate chips
  • ¼ cup ground flaxseed (flax meal)
  • 2 teaspoons pumpkin pie spice
  • ½ teaspoon ground cinnamon
  • Pinch of fine salt
  • 1 tablespoon coconut oil, melted

Instructions

  1. In a medium bowl, mix together the oats, protein powder, shredded coconut, ground flaxseed, pumpkin pie spice, cinnamon, and salt until well combined.
  2. Add the almond butter, pumpkin puree, maple syrup, melted coconut oil, chocolate chips, and chopped pumpkin seeds to the dry mixture. Stir until everything is thoroughly mixed.
