1 whole chicken (4–5 lbs)
1 ½ sticks softened butter
4 cloves minced garlic
2 tbs salt (divided)
2 tsp black pepper
1 tbs bayou city all purpose seasoning
1 tsp smoked paprika
1 tsp cayenne (optional but necessary)
1 tsp onion powder
1 lemon (zest)
1 tbs rosemary (chopped)
1 lb baby potatoes (halved)
1 lb carrots (roughly chopped)
1 large onion (quartered)
4 tbs olive oil
2 sprigs rosemary
4 sprigs thyme
2 sprigs sage
½ cup white grape juice or chicken stock
Instructions
Preheat oven to 425°F (220°C).
Season the chicken with 1 tablespoon of salt.
In a bowl, mix softened butter with minced garlic, bayou seasoning, smoked paprika, cayenne pepper, onion powder, chopped rosemary, and lemon zest to create the garlic butter.
Pat the chicken dry and rub the garlic butter all over it, including under the skin.
Stuff with lemon slices, fresh thyme, rosemary, sage, and half of an onion.
In a large bowl, toss together halved baby potatoes, roughly chopped carrots, and quartered onion with 4 tbs olive oil, salt, and black pepper.
Place seasoned chicken breast-side up on a rack over the vegetables in a roasting pan.
Roast for about 1 hour and 30 minutes or until its internal temperature reaches 165°F (75°C), basting every 30 minutes.
Let the chicken rest for 10-15 minutes before carving.
