  • 89 medium starchy potatoes, thinly sliced
  • 1 head garlic, cut the top off
  • 1 cup heavy cream
  • 1/4 cup whole milk
  • 1 tablespoon unsalted butter, plus more for greasing the baking dish
  • 1 tsp fresh thyme leaves
  • 1/4 tsp nutmeg
  • 1/2 cup grated parmesan cheese, divided
  • 2 cups shredded Gruyère or mozzarella cheese
  • Salt and pepper to taste
  • Fresh chives, for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Roast garlic wrapped in foil for about 30 minutes until soft.
  2. Grease a 9×13-inch baking dish with butter.
  3. Thinly slice potatoes using a mandoline slicer and layer them upright in the dish.
  4. In a saucepan over medium heat, combine heavy cream, milk, butter, thyme, nutmeg, salt, and pepper; warm until combined.
  5. Squeeze roasted garlic cloves into a paste and mix into the cream mixture.
  6. Pour the cream mixture over the layered potatoes. Cover tightly with foil and bake for 40 minutes.
  7. Remove foil, sprinkle with Gruyère or mozzarella and remaining parmesan; bake uncovered for an additional 30 minutes until golden brown.
  8. Let cool slightly before serving and garnish with fresh chives.
