  • 1 pound cherry tomatoes
  • 1 head garlic
  • 3 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • 1 pound pasta (spaghetti or your choice)
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup fresh basil leaves, chopped
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon balsamic vinegar (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse and dry the cherry tomatoes. Place them in a mixing bowl.
  3. Slice off the top of the garlic head to expose the cloves.
  4. Drizzle tomatoes with 2 tablespoons of olive oil; season with salt, pepper, and red pepper flakes. Toss gently.
  5. Spread tomatoes on a lined baking sheet along with the garlic head cut side up. Drizzle garlic with olive oil and sprinkle salt.
  6. Roast for 25-30 minutes until tomatoes are blistered and garlic is soft.
  7. Boil salted water in a large pot; cook pasta according to package instructions until al dente.
  8. Reserve 1 cup of pasta water before draining the pasta.
  9. Squeeze roasted garlic into a bowl; add roasted tomatoes and juices, mashing together.
  10. Stir in remaining olive oil and balsamic vinegar if using; season as needed.
  11. Combine cooked pasta with tomato-garlic mixture, adding reserved pasta water gradually until desired consistency is reached.
  12. Fold in fresh basil leaves and serve topped with grated cheese.
