  • 4 cups thinly sliced onions (sliced crosswise)
  • 6 medium-small Yukon gold potatoes (about 1 1/2 pounds), peeled and thinly sliced (1/8-inch thick)
  • 3/4 cup grated Gruyere cheese, divided into 1/2 cup and 1/4 cup
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon white pepper (or black pepper)
  • 1 teaspoon butter (for greasing the dish)
  • 1/3 cup stock (choose chicken, beef, or vegetable stock)
  • 1 teaspoon finely minced fresh rosemary

Instructions

  1. Preheat your oven to 400°F.
  2. In a sauté pan, heat olive oil over medium-high heat and caramelize the onions until golden brown (15-20 minutes).
  3. Toss sliced Yukon gold potatoes with olive oil, half of both cheeses, salt, and pepper in a bowl.
  4. Grease a baking dish with butter, layer caramelized onions at the bottom, then arrange potato slices on top.
  5. Pour stock over the layered ingredients and sprinkle remaining cheeses on top.
  6. Cover with foil and bake for about 50 minutes until fork-tender.
  7. Remove foil and broil for 5 minutes until lightly browned.
