  • 1/2 tsp kosher salt
  • 565g all-purpose flour
  • 100g unsalted butter, at room temperature
  • 850g – about four medium apples, peeled, cored, and diced small
  • 30g unsalted butter
  • 80g granulated sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp kosher salt
  • 1 tbsp corn starch
  • 125g pecan halves
  • 190g unsalted butter, at room temperature
  • 280g brown sugar
  • 2 tbsp plus 1 tsp ground cinnamon
  • 1/8 tsp kosher salt
  • 115g unsalted butter, at room temperature
  • 225g cream cheese, at room temperature
  • 250g powdered sugar, sifted
  • 12 tbsp heavy whipping cream
  • 1/2 tsp kosher salt

Instructions

  1. In a mixing bowl, combine lukewarm whole milk and granulated sugar. Sprinkle active dried yeast over it and let sit for 5 minutes until frothy.
  2. Add eggs, kosher salt, and half of the flour; mix until combined. Gradually add remaining flour while kneading until smooth. Let rise until doubled in size.
  3. For the filling, melt unsalted butter in a skillet over medium heat. Stir in diced apples, sugar, cinnamon, corn starch, and cook until tender (about 10 minutes).
  4. Roll out dough into a rectangle on a floured surface. Spread softened butter over it and sprinkle brown sugar mixed with cinnamon. Top with apple filling and pecans, then roll tightly into a log.
  5. Slice into individual rolls and place in a greased baking dish. Let rise for another 30 minutes while preheating oven to 350°F (175°C). Bake for 25-30 minutes or until golden brown.
  6. For frosting, beat cream cheese and butter until fluffy; mix in powdered sugar and whipping cream until smooth. Drizzle over warm rolls.
