  • 8 thick slices of sourdough bread
  • 3 balls fresh mozzarella (each 125g), sliced thin and dried
  • 8 sun-dried tomatoes, dried and chopped
  • 4 generous tablespoons basil pesto
  • Butter, as required

Instructions

  1. Prepare all ingredients: Slice and dry the mozzarella.
  2. Butter one side of each slice of sourdough.
  3. On the unbuttered sides of four slices, spread 1 tablespoon of pesto, top with mozzarella and sun-dried tomatoes, then place another slice on top (buttered side out).
  4. Heat a skillet over medium heat and grill sandwiches for 3-5 minutes on each side until golden brown and cheese melts.
  5. Let cool slightly before slicing in half to serve.
