  • 1.5 cups sushi rice
  • 2 cups water
  • 1 teaspoon salt
  • 3 tablespoons rice vinegar
  • 1 tablespoon granulated sugar
  • 1 pound ahi tuna (finely chopped)
  • 3 tablespoons Japanese kewpie mayonnaise
  • 2 tablespoons Sriracha
  • 2 teaspoons sesame oil
  • Fresh avocado (for topping)
  • Jalapeño slices (for garnish)
  • Toasted sesame seeds

Instructions

  1. Rinse sushi rice until water runs clear. Combine rice with water and salt in a saucepan, bring to boil, then reduce heat and cover. Cook for 15 minutes until absorbed. Mix in vinegar, sugar, and sesame oil after cooling slightly.
  2. In a bowl, combine finely chopped ahi tuna with mayonnaise, Sriracha, soy sauce, sesame oil, and lime juice.
  3. Spread cooled rice onto a parchment-lined baking sheet in rectangle shapes about an inch thick. Let sit until firm.
  4. Heat oil in a skillet over medium-high heat. Fry rice rectangles for 3–4 minutes on each side until golden brown.
  5. Top crispy rice pieces with spicy tuna mixture and garnish with avocado slices and jalapeño.
