Instructions

  1. Prepare the cream cheese filling by mixing cream cheese, granulated sugar, flour, milk, and vanilla extract until smooth.
  2. In a large bowl, whisk together flour, both sugars, baking soda, and pumpkin spice.
  3. In another bowl, combine pumpkin puree, vegetable oil, eggs, and vanilla extract until well mixed.
  4. Gently fold the wet ingredients into the dry ingredients until just combined.
  5. Spoon half of the muffin batter into lined muffin cups. Add a dollop of cream cheese filling on top before covering with remaining batter.
  6. Preheat oven to 350°F (175°C) and bake for about 25 minutes or until a toothpick comes out clean.
