Ingredients

Scale
  • 1 tablespoon warm water
  • 6 tablespoons granulated sugar
  • 1 packet active dry yeast (2 ¼ teaspoons)
  • 1 cup warm whole milk
  • 7 tablespoons unsalted butter, divided
  • 1 teaspoon kosher salt
  • 1 large egg, room temperature
  • 3 ½ cups bread flour
  • ¼ cup unsalted butter, softened
  • 2 tablespoons confectioners' sugar
  • 2 tablespoons honey
  • ½ teaspoon cinnamon

Instructions

  1. Activate the yeast: Combine warm water and 2 tablespoons sugar in a bowl. Sprinkle yeast on top and let sit until frothy (about 5 minutes).
  2. Mix the dough: In a large bowl, whisk remaining sugar, warm milk, melted butter (reserve some), salt, and egg. Add frothy yeast mixture and gradually mix in bread flour until a soft dough forms.
  3. Let it rise: Cover with a towel and let rise in a warm place until doubled in size (about 1 hour).
  4. Shape the rolls: Punch down dough and divide into about 12 equal pieces. Shape into balls and place on a greased baking sheet close together.
  5. Second rise: Cover again and let rise for another 30 minutes.
  6. Bake: Preheat oven to 350°F (175°C) and bake for about 15 minutes or until golden brown.
  7. Prepare cinnamon honey butter: Mix softened butter, confectioners' sugar, honey, and cinnamon until smooth.
