Ingredients

Scale
  • 3/4 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 2 tablespoons honey
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 4 tablespoons melted butter
  • 1/4 cup oil (canola, vegetable, or olive)
  • 1 cup milk (whole or 2%)
  • 1 large egg
  • 1 large egg yolk

Instructions

  1. Preheat the oven to 350°F (175°C). Prepare an 8×8-inch or 9×9-inch baking dish by lining it with parchment paper and spraying it with non-stick cooking spray.
  2. In a large mixing bowl, whisk together the yellow cornmeal, flour, sugar, baking powder, and salt until well combined.
  3. In another bowl, combine the melted butter, oil, milk, honey, egg, and egg yolk. Mix until just combined.
  4. Pour the wet ingredients into the dry ingredients and stir gently until mixed. Avoid overmixing.
  5. Let the batter rest for about 5–10 minutes to allow the cornmeal to soften.
  6. Pour the batter into the prepared pan and bake for about 24–30 minutes or until golden brown and a toothpick comes out clean.
  7. Allow cornbread to cool for about ten minutes before slicing. Serve warm.
