  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup butter (melted)
  • 1/4 teaspoon salt
  • 16 oz cream cheese (softened)
  • 1/2 cup granulated sugar
  • 2 tablespoons brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour
  • 1 cup pecans (roughly chopped)
  • 1/4 cup light corn syrup
  • 1/3 cup light brown sugar
  • 1/3 cup heavy cream
  • 1/4 teaspoon cinnamon
  • 4 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, mix together the graham cracker crumbs, sugar, melted butter, and salt. Press this mixture firmly into the bottom of your prepared pan.
  3. In another bowl, beat together softened cream cheese, granulated sugar, brown sugar, eggs, vanilla extract, and flour until smooth. Pour this filling over the crust.
  4. Sprinkle chopped pecans evenly over the cheesecake layer. In a small saucepan over low heat, combine corn syrup, brown sugar, heavy cream, cinnamon, butter, vanilla extract, and salt. Stir until melted and smooth.
  5. Pour this mixture over the pecans on top of your cheesecake layer. Bake for about 35 minutes or until set but still slightly jiggly in the center. Let cool completely before refrigerating for at least two hours.
