  • 8 Granny Smith apples
  • 2 tbsp butter
  • ½ cup sugar
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp allspice
  • ¼ tsp salt
  • juice of ½ lemon
  • 2 ½ cups flour
  • 1 tsp salt
  • 1 cup cold butter
  • ½ cup ice water
  • ¼ cup butter (for toffee sauce)
  • ½ cup brown sugar
  • ¼ cup heavy cream
  • 4 tbsp cornstarch
  • 1 egg
  • 1 tbsp water
  • 2 cups milk
  • 3 egg yolks
  • ⅓ cup sugar (for custard)
  • 1 tbsp cornstarch
  • pinch salt
  • 2 tsp vanilla extract
  • 1 tbsp butter (for custard)

Instructions

  1. Preheat your oven.
  2. Peel, core, and slice the Granny Smith apples, then toss them with lemon juice, sugar, cinnamon, nutmeg, allspice, and salt.
  3. For the pie crust, mix flour and salt in a bowl. Add diced cold butter and work until crumbly. Gradually add ice water until the dough forms. Chill for 15 minutes.
  4. Melt butter with brown sugar for the toffee sauce in a saucepan over medium heat. Stir in heavy cream and cornstarch until thickened.
  5. Roll out half of the chilled pie crust into a circle and place it in your pie dish. Fill with apple mixture topped with toffee sauce.
  6. Roll out the second half of the crust for the top layer, seal edges well, and brush with an egg wash.
  7. Bake until golden brown for about 20 minutes.
